The classic hummus is easy to make and high in protein. The addition of cauliflower, gives it a different flavour boost and makes it a more nutrient dense recipe.
ROASTED CAULIFLOWER HUMMUS
Makes: 1 large cup of dip
INGREDIENTS
- 1 cup roasted cauliflower
- 1/4 cup cashews (soaked)
- 1 cup cooked chickpeas
- 1 clove garlic
- 1 shallot or 1/4 medium onion
- 1 dessertspoon tahini
- 1 TB lemon juice
- 1 tsp sumac
- 1 tsp cumin
- salt (to taste)
METHOD
- Combine all ingredients in blender and blend until you have a nice chunky texture.
