I love zucchini noodles! They form the basis of a fresh, healthy, raw salad and combine well with basil pesto. As a bonus, zucchinis are low in calories due to their high water content yet they are very nutritious containing high levels of potassium, manganese and the antioxidants Vitamin C and A.
ZUCCHINI NOODLES WITH BASIL PESTO AND CHERRY TOMATOES
MAKES: 1 x medium bowl of zoodles
INGREDIENTS
- 4 medium zucchini (spiralised or grated)
- 3/4 cup cherry tomatoes (cut in half)
- 1 Lebanese cucumber cut into half moons
- 3/4 cup of BASIL PESTO
METHOD
- Combine all ingredients.
- Stir through basil pesto and serve.
