Sunflower seeds are very nutrient dense. They contain high levels of vitamin E which is a powerful antioxidant They are also a good source of protein and fibre as well as minerals such as zinc and selenium. They are the chief ingredient in these balls which are quick and easy to make and have a crunchy texture, and nutty, slightly tahini type flavour.
SUNFLOWER SEED BALLS
INGREDIENTS
1 cup sunflower seeds (toasted and blended until fine)
1/4 cup water
1 small onion (diced)
1 tsp onion powder
1 tsp oregano
1 tsp thyme
1 tsp sage
1 tsp celtic salt
2 tsps garlic chives
1/2 medium carrot (grated)
1 slice wholemeal spelt bread (blended in food processor until fine)
1/2 TB cornflour
METHOD
1. Steam onion, carrot and seasonings in a saucepan with water until onion is clear
2. Process sunflower seeds, bread and cornflour until fine
3. Combine wet and dry ingredients
4. Roll into balls and place on lightly greased baking tray
5. Bake at 180d until firm and golden brown
6. Serve with salad or vegetables of your choice or bake in a casserole dish with a homemade tomato sauce
