RUSTIC BEETROOT AND SEED BREAD

There are many different versions of LIfe Changing Bread on the internet now. The original recipe I believe came from the website My New Roots This is my variation using some beetroot fibre for added nutrition and an interesting shade of pink!

RUSTIC BEETROOT AND SEED BREAD

MAKES:  1 x small loaf

INGREDIENTS

  • 1 1/2 cups rolled oats or quinoa flakes
  • 1 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 2 TB chia seeds
  • 1/2 cup psyllium husks
  • 3/4  cup grated beetroot
  • 1/4 cup flaxseed
  • 2 tsp celtic salt
  • 3 TB coconut oil
  • 1 cup water

METHOD

  1. Mix all dry ingredients together.
  2. Melt coconut oil and add together with water and beetroot.
  3. Stir thoroughly until all ingredients are combined.
  4. Press into a greased bread tin.
  5. Allow to stand for at least 2 hours or longer if possible to allow grains and seeds to swell and soften.
  6. Bake in moderate oven (180d) for approx. 45 minutes.
  7. Let cool before slicing.
