SWEET POTATO AND VEGETABLE PATTIES
MAKES: Approx. 18 small patties
INGREDIENTS
- 4 cups sweet potato (Approx. 1 large sweet potato) cut into large chunks
- 1 large onion diced
- 1 cup grated carrot
- 1 cup diced red capsicum
- 1 cup kale (chopped and tightly packed)
- 2 cloves garlic finely chopped
- 1 tsp turmeric
- 1 tsp coriander
- 2 TB sunflower seeds
- 1/2 cup besan flour
- 2 tsps.celtic salt
METHOD
- Roast sweet potato until tender
- When sweet potato is almost cooked add onion, capsicum and garlic and roast until tender
- Roughly mash sweet potato and vegetable mixture
- Add all other ingredients
- Form into small patties
- Fry in a lightly oiled frying pam or baking tray until browned on each side
- Serve with a garden salad and (Vegan) Tomato Relish
