SLICING CHEESE

This recipe is actually a thickened version of (VEGAN) CASHEW SAUCE. The end product  definitely wont taste like its dairy counterpart but it is tasty in its own right and the health benefits are many!

 

SLICING CHEESE

MAKES:  Approx 2 x cups of cheese

INGREDIENTS

  • 1/2 cup cashews (soaked if possible)
  • 1/2 cup sunflower seeds
  • 1/3 carrot
  • 1 small onion
  • 1 clove garlic
  • 1/4 cup lemon juice
  • 3 TB cornflour
  • 2 cups water
  • 1/2 capsicum (finely diced)
  • 1/2 cup rosemary and thyme (finely diced)
  • 1 tsp salt (or to taste)

METHOD

  1. Blend all ingredients (except capsicum and herbs) until smooth and creamy.
  2. Pour into saucepan and stir over medium heat until thickened.
  3. Stir through capsicum and herbs.
  4. Pour into shallow containers of your choice, and refrigerate.
  5. It thickens up in the fridge and you will be able to slice it when set.
