I ordered something similar to this chickpea spread on a wrap at a café one day. It was really tasty so I came home and did my best to replicate the recipe in the kitchen. It is an easy filling for sandwiches or wraps and the combination of chickpeas and tofu gives it a high protein boost!
CHICKPEA SPREAD
MAKES: Approx. 2 x cups
INGREDIENTS
- 1 packet silken tofu 300g (mashed)
- 1 cup of cooked chickpeas or 1 can chickpeas (drained and mashed)
- 2 shallots (finely diced)
- 1 clove garlic
- 1 tsp turmeric
- 2 TB chopped parsley
- 1 carrot (finely grated)
- 2 TB sunflower seeds
- Salt
METHOD
- Saute shallots, garlic and turmeric in a little olive oil.
- Add all other ingredients and cook for a few minutes until all the flavours have combined.
- Serve on bread/toast/ wraps of your choice.
