POTATO, CAULIFLOWER & LEEK SOUP

The cauliflower in this recipe  is a nice addition to the classic potato and leek soup and the rosemary enhances the flavour. Potatoes are a great source of potassium and surprisingly supply a substantial amount of Vitamin C.

 

POTATO, CAULIFLOWER AND LEEK SOUP

MAKES: 1 x medium pot full

INGREDIENTS

  • 3 large potatoes (diced roughly)
  • 1 cup cauliflower
  • 1/2 large leek
  • 1/2 cup cashews (soaked in water for several hours)
  • 1 cup water
  • 1 cup soy milk or coconut cream
  • 2 TB rosemary (chopped finely)
  • 1 tsp celtic salt

METHOD

  1. Place potatoes, cauliflower and leek in a large saucepan.
  2. Add water and salt.
  3. Simmer over low heat until just cooked. Allow to cool.
  4. Drain cashews and blend in 1/2 cup fresh water.
  5. Add coconut/ or soy milk and vegetables and blend until smooth.
  6. Return to saucepan , add chopped rosemary and heat through.
