CAULIFLOWER BREAD

The humble cauliflower seems to be making a bit of a comeback in recent times being transformed into  exotic dishes such as “Cauliflower Rice” and this recipe for “Cauliflower Bread” was adapted from a recipe for a raw cauliflower pizza crust found on the inspiring website Rawmazing http://rawmazing.com/recipe/raw-cauliflower-crust-pizza The original recipe was  dried in a dehydrator however I chose to make a cooked version of the dish.

 

(VEGAN) CAULIFLOWER BREAD

MAKES:  Approx. 10 large patties

INGREDIENTS

  • 1 small head of cauliflower or 1/2 a large one
  • 1/2 cup sunflower seeds
  • 2 cloves garlic
  • 1/4 cup ground flax seeds
  • 1/4 cup hemp seeds
  • 2 TB lemon juice
  • 1/2 cup sun dried tomatoes
  • 1 tsp oregano
  • 1/4 cup onion flakes
  • 1 TB arrowroot mixed in 1/4 cup water
  • salt

METHOD

  1. Blend all ingredients together in food processor.
  2. Spoon onto a baking tray covered with baking paper.
  3. Make approximately 1 cm thick and shape mixture into large patties.
  4. Bake approximately 15 minutes then flip and cook a further 15 mins on the other side.
  5. Serve with avocado or your favourite dip.
