RED LENTIL AND VEGETABLE SOUP

I love lentils. They cook quickly, are inexpensive, fat-free and contain a good serving of protein, fibre, vitamins and minerals.   Based on red lentils, this hearty, warming one-pot winter soup is full of nutrition. You can vary the vegetables according to your taste but this combination works really well!

 

RED LENTIL AND VEGETABLE SOUP

MAKES:  1 x large pot full

INGREDIENTS

  • 1 onion (chopped)
  • 2 cloves garlic (crushed)
  • 3 carrots (diced)
  • 2 potatoes (diced)
  • 1 sweet potato (diced)
  • 1 parsnip (diced finely)
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 cup dry red lentils
  • 1/2 cup coconut cream
  • salt (to taste)
  • water

METHOD

  1. Place all ingredients in a saucepan.
  2. Add water to cover.
  3. Simmer for approximately 30 mins.
  4. When cooked ,stir through coconut cream and serve.
  5. Garnish with fresh herbs eg. coriander.
