MEXICAN BEANS
MAKES: 1 x medium saucepan full
INGREDIENTS
1 cup beans (adzuki, black or red kidney)
1 onion (diced)
1-2 cloves garlic (diced finely)
1 tsp turmeric
1 tsp cumin
1 tsp coriander
2-3 tomatoes (diced small)
3/4 cup coconut milk
1/2 small jap pumpkin (cut into chunks)
1 tsp celtic salt (or to taste)
METHOD
- Prepare and cook beans as per packet directions.
- Lightly saute onion, garlic and spices in a little olive oil.
- Add diced tomatoes and simmer for 5-10 minutes.
- Add pumpkin plus water to cover.
- Simmer until pumpkin is tender.
- Add cooked beans and coconut milk and stir through.
