Tofu, the star of this recipe, is an excellent source of protein containing the 8 essential amino acids as well as being a very good source of calcium and iron. The spice turmeric, is also well known for its anti-inflammatory effects on the body. This is a simple dish with lots of flavour which can be teamed with rice and vegetables to make a complete meal.
COCONUT TURMERIC TOFU
Serves: 3-4
INGREDIENTS
- 300g block firm tofu
- 2 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/4 tsp fenugreek
- 1/4 tsp cardamom
- 1 tsp salt
- water
- 3/4 cup coconut cream
- 1/4 cup lime juice
- 1 dessertspoon cornflour
METHOD
- Cut block of tofu into 10 slices.
- Place tofu in a lightly oiled baking dish and bake until browned on both sides.(*Baking the tofu first seals it and gives it a kind of chewy crust – If you prefer your tofu soft in texture, you can omit this step)
- Place tofu in a shallow dish, add spices, salt and water to cover and marinate for several hours.
- Place marinated tofu in frying pan (including some of the marinating liquid)
- Stir in coconut cream over low heat.
- Add cornflour to the lime juice and stir into tofu mixture until it thickens.
- Sprinkle with some fresh chopped coriander and serve with rice / quinoa and/or a vegetable dish.
