MEXICAN BEANS

Beans are a staple food of many civilisations around the world. Recent research indicates that: not meat, eggs or dairy but “the intake of legumes (beans, chickpeas and lentils) may be the single most important dietary predictor of a long lifespan”. http://apjcn.nhri.org.tw/server/info/articles/diets-foods/Darmadi.pdf  What a great incentive to include more beans in your diet!

 

MEXICAN BEANS

MAKES: 1 x medium saucepan full

INGREDIENTS

1 cup beans (adzuki, black or red kidney)

1 onion (diced)

1-2 cloves garlic (diced finely)

1 tsp turmeric

1 tsp cumin

1 tsp coriander

2-3 tomatoes (diced small)

3/4 cup coconut milk

1/2 small jap pumpkin (cut into chunks)

1 tsp celtic salt (or to taste)

METHOD

  1. Prepare and cook beans as per packet directions.
  2. Lightly saute onion, garlic and spices in a little olive oil.
  3. Add diced tomatoes and simmer for 5-10 minutes.
  4. Add pumpkin plus water to cover.
  5. Simmer until pumpkin is tender.
  6. Add cooked beans and coconut milk and stir through.
