Kale has become known as the “Queen of the Greens” containing high levels of Iron, Vitamin K, C and A as well as powerful anti-oxidants (particularly Lutein – great for supporting eye health) and anti-inflammatory properties. Combined with nutrient dense broccoli and a dressing of tahini which is high in calcium this (almost) raw superfood salad is a winner for nutritional value.
KALE, BROCCOLI and SNOWPEA SALAD with TAHINI DRESSING
Serves: 2-3 people
INGREDIENTS
- 2 large handfuls of kale (de-stemmed and cut into small pieces)
- 1 cup broccoli flowerets
- 1 cup snow peas
- 1 TB sesame seeds
DRESSING
- 2 TB tahini
- 2 TB olive oil
- 2 TB water
- 1/2 cup lemon juice
- 1/2 tsp celtic salt
METHOD
- Mix all dressing ingredients together.
- Lightly steam kale, allow to cool
- Lightly steam broccoli and plunge in cold water before draining
- Combine vegetables together in a bowl and add dressing
- Add sesame seeds and serve
