KALE, BROCCOLI and SNOWPEA SALAD WITH TAHINI DRESSING

Kale has become known as the “Queen of the Greens” containing high levels of Iron, Vitamin K,  C and A as well as powerful anti-oxidants (particularly Lutein – great for supporting eye health) and anti-inflammatory properties. Combined with nutrient dense broccoli and a dressing of tahini which is high in calcium this (almost) raw superfood salad is a winner for nutritional value.

KALE, BROCCOLI and SNOWPEA SALAD with TAHINI DRESSING

Serves: 2-3 people

INGREDIENTS

  • 2 large handfuls of kale (de-stemmed and cut into small pieces)
  • 1 cup broccoli flowerets
  • 1 cup snow peas
  • 1 TB sesame seeds

DRESSING

  • 2 TB tahini
  • 2 TB olive oil
  • 2 TB water
  • 1/2 cup lemon juice
  • 1/2 tsp celtic salt

METHOD

  1. Mix all dressing ingredients together.
  2. Lightly steam kale, allow to cool
  3. Lightly steam broccoli and plunge in cold water before draining
  4. Combine vegetables together in a bowl and add dressing
  5. Add sesame seeds and serve
