The French inspired “Ratatouille” is basically a rich vegetable stew served traditionally as a side dish but by adding some tofu (preferably organic and non GMO) to the mixture you can create a main course which is healthy as well as quick and easy to prepare.
TOFU RATATOUILLE
Serves: 4 as a main course or 6-8 as a side dish
INGREDIENTS
- 2 cloves garlic (finely chopped)
- 1 onion (diced)
- 4 large tomatoes (diced)
- 1 zucchini (cut in rounds)
- 1 eggplant (cut into chunks)
- 1/2 large red capsicum (diced)
- 300g firm tofu (diced)
- 2 tsp onion flakes
- 2 tsp dried thyme
- 1 tsp turmeric
- 2 tsp celtic salt
METHOD
- Dice garlic, onion and tomatoes and cook in a little water until softened.
- Dice all other vegetables and add to the onion/ tomato mixture along with herbs, spices and salt.
- Simmer until the vegetables are almost cooked and then add tofu towards the end of the cooking time so it holds its shape and doesn’t disintegrate too much.
- Switch off the heat until ready to serve to allow the tofu to absorb up all the flavours.
- Serve with rice and a leafy green salad.
