While brightly coloured vegetables are noted for their nutritional value, cauliflower despite its white colour is an exception. It’s rich in vitamins and other compounds thought to play a role in preventing chronic diseases such as cancer. These patties are a good way to use a significant amount of this nutritional powerhouse.
CAULIFLOWER PATTIES
Makes: Approximately 20 patties
INGREDIENTS
- 1 small cauliflower or 1/2 large cauliflower
- 1 quantity Cashew Cheese
- 1/2 cup besan flour
METHOD
- Cut up cauliflower into segments and steam until soft.
- Mash cauliflower, combine with cashew cheese and flour and stir well.
- Form into patties and place on a lightly oiled baking tray.
- Bake for 30-40 minutes until nicely browned turning once half way through.
- Serve with a fresh garden salad.
