Chickpea flour also known as Garbanzo or Besan flour is made from ground chickpeas. It is pale yellow in colour and a staple ingredient in Indian cuisine. It is a gluten free flour and can be used to add a good boost of protein to a range of recipes This mixture can be thickened up and used a s a pizza base, used as a wrap for salads or eaten like a pancake with either a sweet or savoury topping.
CHICKPEA FLATBREAD
MAKES: Approx. 8 small rounds of bread
INGREDIENTS:
- 2 TB ground flaxseeds
- 2 TB warm water
- 1 cup besan flour
- 1 cup water
- salt to taste
METHOD:
- Mix flaxseed and water together and set aside
- Blend besan flour, salt and water together until smooth
- Add flaxseed mixture and combine thoroughly
- Allow to stand for 10 mins
- Heat frying pan, add a tsp of olive oil and swirl around so that it distributes evenly around the pan
- Add approx. 1/4 cup of mixture to the pan and spread out to make the batter even and circular
- Flip when bubbles start to form and it’s golden brown underneath
- Allow to cook on other side before removing and stacking on a plate
- Serve with sweet or savoury toppings of your choice.
*For an even healthier oil-free version , place small spoonfuls into a sandwich press, close the lid and cook until nicely browned.
