CHICKPEA FLATBREAD

 

Chickpea flour also known as Garbanzo or Besan flour is made from ground chickpeas. It is pale yellow in colour and a staple ingredient in Indian cuisine. It is a gluten free flour and can be used to add a good boost of protein to a range of recipes This mixture can be thickened up and used a s a pizza base, used as a wrap for salads or eaten like a pancake with either a sweet or savoury topping.

CHICKPEA FLATBREAD

MAKES: Approx. 8 small rounds of bread

INGREDIENTS:

  • 2 TB ground flaxseeds
  • 2 TB warm water
  • 1 cup  besan flour
  • 1 cup water
  • salt to taste

METHOD:

  1. Mix flaxseed and water together and set aside
  2. Blend besan flour, salt and water together until smooth
  3. Add flaxseed mixture and combine thoroughly
  4. Allow to stand for 10 mins
  5. Heat frying pan, add a tsp of olive oil and swirl around so that it distributes evenly around the pan
  6. Add approx. 1/4 cup of mixture to the pan and spread out  to make the batter even and circular
  7. Flip when bubbles start to form and it’s golden brown underneath
  8. Allow to cook on other side before removing and stacking on a plate
  9. Serve with sweet or savoury toppings of your choice.

*For an even healthier oil-free version , place small spoonfuls into a sandwich press, close the lid and cook until nicely browned.
