This is such an easy recipe yet so full of nutrition. You can add whatever vegetables and flavours you desire but this is generally the way I make it. You can add more liquid and make it more soupish or reduce the liquid and make it more stewish. It’s up to you!
HEARTY POT OF LENTILS
MAKES: 1 x large pot full
INGREDIENTS
- 1 onion (diced)
- 1-2 cloves of garlic (chopped finely)
- 2 tomatoes (chopped finely)
- 1 carrot (chopped finely)
- 2 stalks of celery (diced small_
- 1 parsnip (grated)
- 1/4 medium jap pumpkin (chopped into chunks)
- 1 potato (grated)
- 1-2 bay leaves
- 1-1 1/2 cups brown lentils (rinsed)
- 1/4 cup chopped parsley
- salt to taste
- 1 tsp turmeric, cumin, coriander
- enough water to cover ingredients
METHOD
- Combine all ingredients in a large saucepan.
- Add water to cover ingredients.
- Bring to boil then simmer on low heat for approximately 1 hour until cooked.
- May need to add more water as the lentils cook.
- Serve with a fresh garden salad and wholemeal bread or on a bed of rice or quinoa.
