RAW ORANGE CHEESECAKE

I love the flavour of citrus!  However, the orange zest in this recipe provides more than just flavour. Everyone knows of the immune boosting power of oranges but you may not have considered the value of the orange peel. It is rich in flavonoids (antioxidant compounds that help fight many chronic diseases) and is higher in many nutrients, such as Vitamin C, when compared to the flesh of the orange.

RAW ORANGE CHEESECAKE

INGREDIENTS

MAKES: 1 medium pie cut into 10 serving slices

BASE

  • 1/2 cup almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup dates (soaked)

FILLING

  • 1 cup cashews (soaked)
  • 1/4 cup agave nectar
  • 4 TB coconut oil (melted)
  • 1/2 cup orange juice
  • 1/2 a lemon (juiced)
  • Zest from 1 orange
  • 1 tsp of orange peel powder (optional)

METHOD

  1. Combine all base ingredients in blender and blend until well combined.
  2. Press base mixture into a pie dish and refrigerate.
  3. Combine all filling ingredients in blender and whizz until smooth and creamy.
  4. Spoon filling over base and place in freezer until set.
  5. This raw dessert is best stored in the freezer and removed just before serving to allow it to thaw slightly.
  6. Decorate with orange segments and/or zest and serve with a dollop of coconut or cashew cream.
