ROASTED CAULIFLOWER HUMMUS

The classic hummus is easy to make and high in protein. The addition of cauliflower, gives it a different flavour boost and makes it a more nutrient dense recipe.

ROASTED CAULIFLOWER HUMMUS

Makes: 1 large cup of dip

INGREDIENTS

  • 1 cup roasted cauliflower
  • 1/4 cup cashews (soaked)
  • 1 cup cooked chickpeas
  • 1 clove garlic
  • 1 shallot or 1/4 medium onion
  • 1 dessertspoon tahini
  • 1 TB lemon juice
  • 1 tsp sumac
  • 1 tsp cumin
  • salt (to taste)

METHOD

  1. Combine all ingredients in blender and blend until you have a nice chunky texture.
  2. If you like a smoother texture, add a little water and blend until the desired consistency,
