This tofu slice is the vegan version of a traditional egg quiche. It is tasty and easy to make especially as it is crustless! Tofu is protein rich and a very good source of iron and calcium. To obtain maximum health benefits make sure the tofu label says made from non-GMO (genetically modified) soy beans and preferably organic ones!
SAVOURY TOFU SLICE
Makes: 1 x medium pie cut into 8 slices
INGREDIENTS
- 500 g block firm tofu
- 1/2 cup cashews
- 1/4 cup sunflower seeds
- 1/3 carrot
- 1 small onion
- 1 clove garlic
- 2 tomatoes
- 3 TB cornflour
- 1-2 TB lemon juice
- 2 tsps. Italian or mixed herbs (or whatever herbs you like)
- 1/4 cup chopped parsley (optional)
- 2 tsps. turmeric
- 2 tsps salt
METHOD
- Grate tofu into a bowl.
- Blend all other ingredients.
- Thoroughly combine tofu with blended mixture.
- Pour into lightly oiled quiche dish.
- Bake 180 d until lightly browned (approximately 45 mins)
- When half cooked you can decorate with tomato, zucchini or asparagus or a sprinkle of sesame seeds (if you like)
- Serve with a fresh garden salad.
*This basic recipe can be adapted in many ways eg by adding some grated zucchini, shredded spinach, silverbeet or kale, diced capsicum and any type of herbs you like…..
