SPELT OAT CRACKERS

 

The two main ingredients in these crackers, wholemeal spelt flour and wholemeal rolled oats, contain soluble fibre which is more easily digested in the body as well as other essential vitamins and minerals. These crackers make a healthy alternative to the processed crackers and crispbreads in the supermarket.  They are very versatile in that they can be served with sweet or savoury toppings and their size can be tailor-made to suit your needs!

SPELT OAT CRACKERS

MAKES:  Approximately 20 smallish crackers

INGREDIENTS

  • 1  1/4 cups wholemeal spelt flour
  • 1  1/4 cups wholegrain rolled oats
  • 2 TB sesame seeds
  • 1 teaspoon salt
  • 1/2 cup water
  • 1/2 cup olive oil (extra virgin/cold pressed)

METHOD

  1. Combine flour, oats, salt and seeds in bowl
  2. Emulsify oil and water (ie: mix thoroughly – I often shake vigorously in a glass bottle).
  3. Add wet to dry ingredients and mix well together
  4. Allow to stand for 5-10 minutes for grains to absorb liquid
  5. Roll out thinly on lightly floured benchtop
  6. Cut out crackers using a cookie cutter or other improvised device.
  7. Place crackers on ungreased baking tray
  8. Bake approximately 30 mins at 180d or until lightly golden

* Different brands of spelt flour and types of rolled oats may affect the consistency of the mixture so you may need to add a little extra water or flour to make the dough “just right”.

*This mixture can be used as a base for pies or quiches. Makes enough for one medium pie. (If it’s a bit sticky you can roll it out out between waxed paper before placing in pie dish.
