SWEET POTATO AND VEGETABLE PATTIES

SWEET POTATO AND VEGETABLE PATTIES

MAKES:  Approx. 18 small  patties

INGREDIENTS

  • 4 cups sweet potato (Approx. 1 large sweet potato) cut into large chunks
  • 1 large onion diced
  • 1 cup grated carrot
  • 1 cup diced red capsicum
  • 1 cup kale (chopped and tightly packed)
  • 2 cloves garlic finely chopped
  • 1 tsp turmeric
  • 1 tsp coriander
  • 2 TB sunflower seeds
  • 1/2 cup besan flour
  • 2 tsps.celtic salt

 

METHOD

  1. Roast sweet potato until tender
  2. When sweet potato is almost cooked add onion, capsicum and garlic and roast until tender
  3. Roughly mash sweet potato and vegetable mixture
  4. Add all other ingredients
  5. Form into small patties
  6. Fry in a lightly oiled frying pam or baking tray until browned on each side
  7. Serve with a garden salad and (Vegan) Tomato Relish
