BROCCOLI FRITATTA

This frittata is a good way to include some more broccoli in your diet. All the cruciferous vegetables contain cancer-fighting properties but broccoli , in particular, seems to offer the most protection. It contains compounds that stop cancer cells from dividing and are able to kill abnormal cells. If you’re  not convinced of the health benefits of broccoli you can use any seasonal vegetables that you might have growing in the garden or want to use up out of your fridge.

 

BROCCOLI  FRITATTA

MAKES: 1 x medium pie cut into 8 slices

INGREDIENTS

  • 300g tofu (firm)
  • 1/3 cup cashews
  • 1 1/2  cups water
  • 1 tsp turmeric
  • 1 TB onion flakes
  • 2 tsps. celtic  salt
  • 1 small onion diced
  • 1 garlic clove diced finely
  • 1/2 large red capsicum diced
  • 1 cup diced broccoli

METHOD

  1. Blend first 6 ingredients in a blender until smooth and creamy.
  2. Saute the last 4 ingredients in a little oil or water until softened.
  3. Combine tofu mixture and vegetable mixture and pour into shallow baking dish.
  4. Bake in a moderate oven (approximately 30 mins) until lightly browned and set.
  5. Serve with a toast for breakfast or a fresh garden salad for lunch.
